Five Ingredient Vegan Choc Chip Cookies

A seriously quick and easy recipe – perfect for a lazy sunday, baking with children or just when you’re craving something sweet.

I love to make a big batch of these to snack on throughout the week. I have a sweet tooth and so in the afternoon I love having one of these delicious chewy cookies to munch on with a cup of tea!

The recipe below makes twelve and takes around twenty five minutes from start to finish. Plus, you only need one mixing bowl which means minimal washing up too.

Ingredients:

  • 3 Ripe Bananas
  • 2 Cups of Oats (around 200g)
  • 2 tbsp melted Peanut Butter
  • 100g Mixed Seeds
  • 50g Dark Chocolate Chips

Method:

  1. Mash up the bananas in a mixing bowl and mix in the melted peanut butter.
  2. Add the oats, seeds and chocolate chips – and combine well.
  3. The mixture will come together to form a dough-like consistency. Roll the mix into twelve balls and press down into little discs.
  4. Line a baking tray with greaseproof paper, and line up your cookies.
  5. Bake in a pre-heated oven, at 180C, for 15 minutes until lightly browned on top.
  6. Cool on a wire rack – try not to eat them all while they’re still warm.

Optional: I melted the remaining chocolate chips from my little bag and drizzled over the cookies to finish.
